The kitchen is Chef Paul Qui's — James Beard winner, Top Chef Season 9, twenty years of handroll thinking finally on its own counter. The food is built to be eaten immediately: handrolls wrapped to order so the nori stays crisp, sauces served tableside, cold tastings rotated weekly with what arrived from the docks.
