James Beard Award–winning Chef Paul Qui's twenty-year vision, alive on South Lamar. Sushi as craft. Nori still crisp.

Chef Paul Qui has carried this idea since his early days at Uchi in 2003 — sushi as both craft and visual experience, closer to art than food. Kitsu Nori is that vision, finally alive on South Lamar.
Inspired by ikebana and kintsugi — balance, restraint, and intention in every bite. Nothing accidental. Everything transformed.
Read our story
Kitsu Nori is a neighborhood handroll bar built on simplicity, care, and repetition done well. We focus on one thing — fresh handrolls, made to order, meant to be eaten immediately — served in a warm, welcoming space that belongs to the neighborhood.
Classical French technique meets Japanese precision: sake au poivre, brown butter meunière, rice tinted naturally with beet juice. Sauces served tableside to keep the nori crisp.
